  • Medium grind
  • 3 – 5 heaped tablespoons | 30 – 50g
  • 400 – 500ml of hot water
  • 3 – 4 minutes brewing time
  • Hot water
  • Cup
  • Ground coffee
  • Tablespoon or coffee scoop

STEP 1

Unfold the filter paper and place it in your Chemex. The triple-fold lines up against the spout, and the single fold away from the spout.

STEP 2

Run hot water through the filter to remove any paper flavour. This has the added benefit of warming up your vessel. Remember to discard the water.

STEP 3

Next, add your ground coffee – about (we are only showing 2!) 3 to 5 heaped tablespoons or 30 – 50 grams of medium ground coffee to 400 – 500 ml of hot water.

STEP 4

Next, saturate the coffee to let it bloom. This enhances the flavour by releasing carbon dioxide and takes about 30 seconds. When the bubbles are done you will know you are good to go.

STEP 5

Next you are going to add your water in stages. Start with about half, pouring in a circular motion, sticking to the same direction. Remember to carefully saturate all the coffee as you go, almost stirring with the water while you pour.

Once you’ve added half your water, let it filter through to the bottom for about 45 seconds.

STEP 6

Once filtered through you can pour the rest of your water, agitating the coffee around the sides as you go. Allow the last of the water to filter through. This whole process will take you about three to four minutes.

STEP 7

Before you serve, gently remove your paper filter by pinching the edges together.

STEP 8

Pour and enjoy!
